At Eggs &..., the first meal of the day is anything but ordinary. Soft scrambled eggs tucked between buttery brioche, a golden yolk poised to spill over a juicy beef patty, cheddar melting into caramelised onions, and tender oxtail finding an unlikely – but welcome – home inside a breakfast sandwich. For diners continually searching for new places to eat, St Andrew’s newest food spot offers another option to add to the rotation.

The egg-led, all-day casual dining concept is the latest venture from Broken Plate co-principals Chef Damion ‘Stewie’ Stewart and Kwasi Henry, who have taken one of the kitchen’s simplest staples and built a restaurant around its possibilities.

‘Egging’ on something new

For Stewart and Henry, inspiration often comes through travel. The co-principals are avid travellers, with exposure to restaurants, food and dining concepts in other destinations continually feeding their creativity. Eggs &... grew from that curiosity and from recognising how something as simple as an egg sandwich could be developed into a memorable product.

The idea soon expanded beyond breakfast. The pair considered what would keep the concept relevant after the morning rush, eventually developing a contemporary breakfast-to-lunch offering that is fast-casual and convenient without feeling like traditional fast food. Jamaica already has a strong breakfast market, but the co-principals saw room to create a distinct category and experience around Eggs &....

“The ampersand is really the whole idea. Eggs are our starting point, but the ‘&’ gives us freedom,” Henry said.

Eggs & bacon, Eggs & steak, Eggs & oxtail or Eggs & coffee – the name leaves the possibilities deliberately open, allowing the concept to extend beyond the traditional definitions of breakfast and brunch.

Cracking the menu

The menu is concise but varied, spanning sandwiches, plates, bowls and sides, with prices ranging from $850 to $2,550. Familiar combinations such as bacon, egg & cheese and sausage, egg & cheese sit alongside the oxtail sandwich, salmon cake sandwich, steak & egg, tuna melt and the plant-based earthilicious sandwich.

At the centre of the line-up is the signature Broken Eggs &, made with toasted brioche, grilled beef patty, maple bacon, an over-medium egg, cheddar, caramelised onion, house pickles, sriracha aioli and the restaurant’s signature sauce.

“It’s rich, messy, and exactly the kind of sandwich you should need both hands to eat,” Stewart said.

For diners looking beyond sandwiches, the morning bowl maintains the breakfast focus, while steak, tuna and salmon bowls offer additional options. The Eggs & plate is joined by sides including French toast, hashbrowns, eggy fries and golden French fries.

Beverages form part of the offering, too, with coffee and matcha among the options available alongside the food. “We want our signature coffee and matcha options to become things people come specifically to Eggs &... for,” Stewart said.

For Stewart, the menu is less about fitting into one traditional cuisine category and more about starting with familiar breakfast and comfort-food ideas before incorporating different ingredients and influences. “The sandwiches are at the heart of it – soft scrambled eggs, brioche, bacon, sausage and our signature combinations – but then you have ingredients like oxtail, plantain and different sauces and flavours that give the menu its own personality,” Stewart said.

“Eggs are the anchor, not the limitation,” he added, highlighting the high-quality source of protein.

A sunny space

The focused approach extends to the restaurant itself. At approximately 700 square feet with seating for 25, Eggs &... is compact, contemporary and casual. Henry led the interior design, creating a space intended to accommodate different dining occasions, from an early sandwich before work to breakfast with friends or lunch later in the day. “The food has personality, and the space has little moments of humour throughout. The music matters. The packaging matters. The way the food comes out matters. The interaction with the team matters,” Henry said.

Rather than covering every surface with branding, the ampersand serves as a recurring visual element within the space. Convenience has also been incorporated into the operation through self-ordering kiosks and online ordering. The intended diner is equally varied – from someone grabbing breakfast and coffee before work to friends meeting on a Sunday morning, families dining together or customers stopping in for lunch. “You should walk in, hear the music, smell the food, see sandwiches coming off the line and immediately understand that Eggs &... is supposed to be fun,” Henry said.

A good ‘egg-sperience’

Presentation was another consideration in developing Eggs &..., particularly at a time when a diner’s first encounter with a restaurant may be through social media. The team considered packaging, colours, textures and how the food appears when served while maintaining that taste must come first. “I don’t want to create food that’s designed for a photograph and disappointing after the first bite. The best social media strategy for a restaurant is still serving something people genuinely want to tell somebody else about,” Henry said.

That thinking also informed how the menu was developed. The question was not simply whether a dish tasted good but whether it belonged at Eggs &..., helping to keep the offering focused.

Hatching more

The ampersand leaves room for the concept to continue evolving, with rotating sandwiches, bowls, seasonal drinks, collaborations and different experiences around breakfast and lunch among the possibilities. For now, however, the priority is establishing the first location and its core menu before pursuing expansion.

“The goal isn’t simply to open more restaurants. It’s to build a brand worth expanding,” Henry said.

For now, Eggs &... is putting its own interpretation on a familiar ingredient, combining it with Jamaican flavours and an all-day casual dining concept designed to move beyond the morning rush.

Eggs &... officially opened its doors on Monday, August 24, at The Rogers Commercial Centre, located at 56–58 Lady Musgrave Road, Kingston 6. “We sold out on our first two days, which was both exciting and humbling after spending so much time developing the concept,” shared Henry. “It’s been especially encouraging to see our sandwiches emerge as the best sellers because they were always intended to be at the heart of Eggs &.... We’re very intentional about quality, including our brioche, which is made fresh daily, so we’re quickly adjusting production to meet demand without compromising the standard we want to be known for.”

Beyond the strong start, the team says it has been equally rewarding to see how customers are making Eggs &... their own. “We’ve also loved seeing how different people are experiencing Eggs &..., from grabbing breakfast on the go to meeting friends, dining with family and exploring beyond traditional breakfast. It’s still early, so we’re listening, learning and refining every day. Selling out was a great start, but what excites us even more is already seeing repeat guests, people finding their favourites and recommending Eggs &... to others. Ultimately, that’s what we want: to give people a reason to keep coming back.”

Eggs &... is open Mondays to Sundays from 7 a.m. to 3 p.m.
